
Breakfast Burritos
These breakfast burritos are a hit in our family because they can easily be customized to each member’s taste preference. They are loaded with delicious eggs, cheese, fresh vegetables and topped with our favorite, salsa and homemade lime crema.

Ingredients
- 8 Farmer’s Finest Free Range Eggs
- Salt and pepper (to taste)
- A pinch smoked paprika
- 2 bell Peppers diced
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 1/2 lime, juiced
- Salt (to taste)
- 6-8 large tortillas
- 1 can black beans
- 1 cup cheddar cheese, grated
- 1 bunch cilantro
- 1 cup salsa
Instructions
- Crack all of the eggs into a medium size bowl and whisk. Season with salt and pepper. Add the pinch of smoked paprika.
- Scramble eggs on medium heat until cooked through. Add diced bell peppers and cook for 3-5 minutes more. Allow to cool while you make the crema.
- Prepare the crema. Combine sour cream and mayonnaise. Add the juice from half of the lime (and zest if you like). Add a pinch of salt and stir until smooth and creamy.
- Arrange your tortillas on a clean surface. Add about an eighth of the eggs and peppers, beans, salsa, cheese and cilantro.
- Fold the sides of the tortilla inwards overtop of the filling, then roll the burrito over the filling, tucking as you roll.
- Set the burritos on a large plate, seam side down until ready to eat.
- Serve with more salsa, lime crema and enjoy!
