Ingredients
- 2 Farmer's Finest Free Run Large Eggs
- 2 cups cooked jasmine rice (preferably day-old)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 small shallot, finely chopped
- 2 tbsp kecap manis (sweet soy sauce)
- 1 tbsp soy sauce
- 1 tsp chili paste
- 1/2 cup shredded chicken
- 1/4 Cucumber sliced
- 2 vine tomatoes sliced
- Fried shallots for topping
Instructions
- Heat 1 tbsp oil in a large pan over medium heat. Add garlic and shallot and fry until fragrant (about 1 minute).
- Add the rice, breaking up any clumps. Stir in kecap manis, soy sauce, chili paste, and the shredded chicken and fry for another 3-4 minutes.
- Push the rice to one side of the pan. Add the remaining 1 tbsp oil and crack in your @farmersfinesteggs . Add a lid and cook eggs to your preferred doneness.
