Wintery Walnut Egg Salad

Ingredients

  • 4 Farmer’s Finest Comfort Coop Eggs
  • 1 medium sweet potato, cubed and then roasted
  • 1/4 cup olive oil or extra-virgin olive oil
  • 3 tablespoons lemon juice, plus more to taste
  • 1 tablespoon red wine vinegar or sherry vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon grated garlic (from 2 small cloves)
  • 2 tablespoons finely diced shallot
  • Salt and black pepper
  • 4 -5 cups lightly packed salad greens, preferably a mixture of spinach greens, baby green and red leaf lettuce, chard and arugula
  • 1/2 cup thinly sliced red radish (6 to 8 medium radishes)
  • 1 cup walnut halves
  • 2 tablespoons roughly chopped dill (optional)
  • 1/3 cup parmesan petals (optional)

Instructions

  1. Preheat the oven to 400. Wash and dry the sweet potatoes. Cut into uniform cubes and toss in a bit of olive oil and sea salt. Roast in a preheated oven for 20 minutes. 
  2. Time to boil the eggs! Fill a medium saucepan with slightly cool water and add your eggs. Take the stove and cover. Bring to a boil on medium-high heat. Once the water is boiling, place the pot lid on and remove from the heat. Allow the Farmer’s Finest Comfort Coop Eggs to sit for the following amount of time, depending on your yolk preference: Runny yolks - 2 minutes Medium of ‘Jammy’ yolks - 4 minutes Hard-Boiled yolks - 6 minutes
  3. Once the eggs have finished their sit-time, remove the eggs from the pot and add to an ice-bath for 3-5 minutes before peeling.
  4. Mix up the vinaigrette: Add the olive oil, lemon juice, red wine vinegar, mustard, garlic and minced shallot. Stir together, and add a pinch of salt and pepper.
  5. Next, mix up your salad. Toss the greens with a drizzle of dressing first. Then add the sweet potato, radishes, half of the walnuts, a large pinch of dill and another drizzle of dressing. Toss gently.
  6. Plate the tossed salad, top with perfectly boiled Farmer’s Finest Comfort Coop Eggs, the other half of the walnuts and some parmesan petals. Drizzle with a bit more vinaigrette.
